Our organic artisanal pasta is made from a careful selection of the best durum wheat grown 100% in our sunny lands of Puglia. Without additives or preservatives, the semolina is then kneaded, bronze drawn and slowly dried on frames. The rough drawing captures the most full-bodied sauces. From orecchietta to cavatelli, from paccheri and calamarata to spaghetti and thin tagliolini, with durum wheat and burnt wheat, each shape is a tribute to the versatility of the chef.
